Here our story! Meet Maria Clara and discover the philosophy behind our organic farming practices.

Maria Clara Tiberi, founder of Podere Tiberi

Hello everyone! I’m Maria Clara, a young agricultural entrepreneur, a true food enthusiast, deeply passionate about the entire food & wine industry and its communication.

I discovered the olive growing world through a short tasting, and that’s when the love was born—so strong that it completely changed my plans for a future in law!

That’s how Podere Tiberi came to life, not linked to any family tradition, but born and shaped through more structured training. Professional taster courses, two levels as an international olive oil sommelier, business masterclasses focused on this sector, and continuous learning have all been essential to my journey.

The farm was created as a reality focused on conscious production, aimed exclusively at quality, as the best representation of the territory.It all began in 2019, on a plot of land my family bought some years earlier with different plans, and is gradually taking shape through the restoration of old abandoned olive groves and the plating of new ones.

What pushed me to take the leap? The desire to talk about extra virgin olive oil and share my growing love for this world, starting from the field. I realized there was still an audience too far from our incredible resource!

We immediately started to work with this philosophy. As usual, we waited three years and now we are finally certified!

Sustainability

We respect the land’s natural features. We are restoring the old olive trees in the woods, integrating them with it and controlling its natural growth. We choose only Italian native olive varieties and reject super-intensive groves. We use natural labels, eco-friendly Favini papers, sustainable tasting materials.

Location

We are located 140 km far from Rome. We are in the heart of Tuscia, in the province of Viterbo. The farm is exactly located in the municipality of Cellere, very close to Canino, known for its ancient olive-growing vocation.

Our Olive Trees

The company consists in 8 hectares. There are hills, small valleys and woods. We are located at 350 mt above sea level. The olive grove gives space exclusively to Italian and native cultivated variety and we combine the restoration of abandoned trees with the planting of young olive groves. In the last years we have increased the number of olive trees adding a thousand new Caninesi. Additionally, we have created a new smaller olive grove of Maurino, a native variety that produces a very fragant oil.

The detail attention born in the FIELD

Throughout the year: biological fertilization, irrigation in the summer and use of machines such as a scarifiers that don't compromise the structure of the soil.

During the harvesting: it is semi mechanical and it starts at the right moment of the ripeness, when the olive is still predominantly green.We use only perforated crates, which never stand in the sun.

..and it continues from TRANSPORT to the MILL.

In 6/8 hours all the olives are transported to the oil mill, carefully selected by us. They are processed with a continuous cycle plant of thePieralisi high range. During the process the temperature isconstantly controlled.

The extraction takes place in twophases, with the advantage of reducing the use of thewater and keeping the important substances, contained inthe olive paste, unchanged.

Before being bottled, the oil is stored in stainless steel tank, protected from light, in an air-conditioned environment.

The oil is filtered to ensure a longer shelf life.
